Those are the words of Barkha Limbu Daily, chef and owner of The Cheel, a restaurant in Thiensville, Wis., that was destroyed by a fire in November 2020.
The Wisconsin Economic Development Corporation has awarded the restaurant $250,000 to help rebuild, reports the Sheboygan Press.
Daily, who came to the US from Nepal in 2003, founded The Cheel after a successful career in international marketing.
The restaurant's focus on authentic Nepalese cuisine using local ingredients has made it a hallmark of the community, according to village officials.
Since its founding, The Cheel has invested in two other restaurants in the village, created 25 jobs, and led the redevelopment of three commercial properties.
The new construction will double the restaurant's capacity and include an expanded dining room, bar, patio, event space, and live music venue.
"We could not do this without WEDC.
We are lucky to have an organization that supports small, and woman-owned businesses in this state," Daily says.
